A refreshing new twist on an old favorite. This is for the Asian tapioca pearl drink that is very popular in Taiwan now. Bubble Tea isn't hard to make at home and it is a lot more healthy and fresher tasting to make at home. If you don't have a cocktail shaker just use a 16 oz tightly sealed thermos or jar. I used a thermos and it works great! I will include recipes for the tea base. Note: You have to purchase the Bubble tea straws to drink up the large tapioca pearl. Otherwise you can use regular pearls, but that's not as much fun!

1/4 cup pineapple juice
1/2 cup coconut milk
1/4 cup low-fat milk
1/2 cup tea, base
1 tablespoon sugar syrup
2 -4 tablespoons cooked tapioca
ice

Steps:

  • Put all ingredients, except Tapioca pearls and Ice, into cocktail shaker or other tightly sealed container.
  • Shake for about 10 seconds or until nice froth or bubbles appear at surface.
  • Place Tapioca pearls at bottom of tall glass, then pour shaken liquid into the glass on top of them.
  • Put as much ice as you want and stick a Bubble tea straw in your glass and enjoy.

This looked too good not to post. Be all the rage while drinking the latest Asian trend in teas! How silly, huh? Drink it because it's GOOD! *Large, specialty tapioca pearls specifically designed for bubble teas are available in Asian markets and gourmet food stores. If using straws, make sure they have a large diameter.

2 cups prepared brewed green tea
1/3 cup sugar
4 cups water
1/2 cup pearl tapioca (Raw, black or pastel-colored)
4 cups cantaloupes or 4 cups watermelon, chunks
4 cups ice cubes
2 cups orange juice
1/2 cup coconut milk

Steps:

  • Combine green tea with sugar and set aside.
  • In a medium saucepan, bring water to boil over high heat; add tapioca pearls. Stir lightly and let pearls float to top. Reduce heat to low and simmer, uncovered, 25 minutes. Remove from heat and let pearls sit in water 25 minutes until chewy and translucent.
  • Drain and rinse under cold water. Combine in medium bowl with sweetened tea. Refrigerate until needed.
  • Blending in 2 batches, combine melon, ice cubes, orange juice and coconut milk in blender or food processor. Process until smooth.
  • Place about 1/4 cup tapioca mixture in bottom of large glass. Fill with melon mixture. Serve with straws if desired.

Boba (Coconut Milk Black Tea with Tapioca Pearls) image

Boba tea, or bubble tea, is a popular drink that originated from Taiwan. I made this coconut variation because I had coconut cream on hand and wanted something different from the regular black milk tea variation. This coconut version tastes just like the one you'll find in a bubble tea cafe.

7 cups cold water
½ (8.8 ounce) package tapioca starch balls
½ cup brown sugar
½ cup white sugar
4 cups brewed black tea (such as Lipton®), chilled
1 (14 ounce) can coconut cream
12 ice cubes
1 cup milk
⅔ cup white sugar

Steps:

  • Bring water to a boil in a large stockpot. Pour in tapioca and simmer for 25 minutes. Stir occasionally to prevent sticking. Remove from heat and let balls sit in water for 25 minutes.
  • Return stockpot to the heat; simmer and stir for 25 minutes more. Remove from heat and let rest again until centers of the balls are no longer powder, another 25 minutes. Drain.
  • Combine brown sugar and white sugar in a large bowl. Pour tapioca balls into the sugar mixture. Cover with a damp cloth and let rest for 15 minutes while preparing the tea.
  • Process tea, coconut cream, ice, milk, and sugar together in a blender until combined.
  • Scoop 1/4 cup of the tapioca into each tall glass and fill with tea. Enjoy with large straws to suck up the tapioca, or use spoons.

Chocolate Strawberry Bubble Tea image

It sounds a little fancy but it is to die for! If chocolate covered strawberries are your thing then you have to try this. It is creamy and sort of thick like a bubble tea milkshake. But very yummy. Note :Minute tapioca pearls can be found in Asian supermarkets and are grey in the package.

1 cup milk
1/2 cup tea, base
1 cup frozen strawberries or 1 cup fresh strawberries
3 teaspoons sugar substitute or 3 teaspoons sugar
1/4 cup bittersweet chocolate chips or 1/4 cup semi-sweet chocolate chips
2 teaspoons water
1 tablespoon sugar syrup
2 -4 tablespoons tapioca
ice
ice

Steps:

  • If using frozen strawberries put into colander and run hot water over them until soft and defrosted.
  • Place strawberries into food processor or blender with 1 1/2 tsp of sugar or Splenda. Blend until pureed. This should make about 1/2 cup of strawberry puree.
  • Put chocolate chips and remaining 1 1/2 tsp of sugar into a small microwaveable bowl and place in microwave on high for about 30 seconds.
  • Stir, then microwave for about 10-15 seconds more until thoroughly melted.
  • Pour 2 tsp water into bowl of melted chocolate and stir until the chocolate has the consistency of water chocolate sauce.
  • Pour tea base, milk, strawberry puree, melted chocolate sauce, and sugar syrup into cocktail shaker or thermos and shake for about 10 seconds or until frothy on surface.
  • Place tapioca pearl into bottom of tall glass and pour shaken mixture over it.
  • Add Ice and serve with bubble tea straw. Enjoy!
